Using a knife, slice an x on the bottom of each tomato and put them into some hot water. When the skin starts to wrinkle, split them and strip the skin from them. Then, roughly chop them.
In a small pan, with a little oil, heat some minced onion, tomatoes and cook for about 20 minutes. Add some chili, garlic and all the spices. Simmer the sauce over medium heat. Continue simmering for 15 minutes or until the sauce reaches the taste and consistency you like.
